Mishti Doi has a unique significance in Bengali households, where it symbolizes more than just a sweet treat and usually concludes a meal or celebrates an occasion. From festive gatherings to cozy dinners during the week, it is a dessert that evokes a sense of comfort and nostalgia. Traditionally, Mishti Doi is created using sugar, which can pose a challenge for those who are focused on losing weight or maintaining a healthy lifestyle. Nevertheless, the affection for this dessert is unwavering, leading to questions about whether it can ever be guilt-free. The answer is yes. It is possible to prepare a no-sugar variant of this cherished Bengali delight that is equally delightful.

Mishti Doi is a classic Bengali dessert made by fermenting milk sweetened with caramelized sugar. It is allowed to set slowly, has a mild tang, and boasts a rich caramel taste. Traditionally, it is cooked in clay pots that naturally help the yogurt thicken. While it may not be identical to the original, there's no need to fret. Without sugar, allulose does not support the Lactobacillus culture as well, and Greek yogurt has less whey, leading to a softer texture that you can scoop with a spoon. However, the taste is still very enjoyable, making it a wonderful sugar-free substitute for the classic recipe.

To achieve a firmer consistency, mix in 1 tablespoon of full-fat milk powder with the Greek yogurt. This adds more solids, which helps balance out the absence of sugar and whey. Even so, anticipate it to be softer than the traditional Mishti Doi, but it will still be well-set and creamy.

How To Make Mishti Doi At Home?

Begin by heating a heavy-bottomed pan over medium heat. Pour in the allulose and allow it to melt and turn into a deep amber color, stirring gently. This should take around 3-4 minutes, so keep an eye on it. After that, lower the heat. Gradually add the milk in small amounts (around 100 ml each time) while whisking continuously. Grease the insides of the matkas (or glass jars or ramekins) with the remaining 50 g of Greek yogurt. Pour the milk mixture into the containers and cover them loosely with a muslin cloth. Set them aside in a warm area for 8-12 hours. Once it has slightly set and has a mild tang, place it in the refrigerator for 4-6 hours to become firmer.

Rich, mildly tangy, and wonderfully caramelized, this no-sugar Mishti Doi demonstrates that you can enjoy a truly fulfilling traditional dessert without using sugar.
